Izumibashi Sake Brewery, which has a brewery in Ebina City, Kanagawa Prefecture, is one of the few "cultivation and brewing breweries'' in Japan, advocating the belief that "Sake production begins with rice production.'' A distinctive feature of the brewery is that everything from cultivating sake rice to milling and brewing is carried out in the vicinity of the brewery and nearby areas. It was founded in 1857 (Ansei 4) during the Edo period. Sticking to traditional manufacturing methods, they only use Junmai sake, which is made using the traditional Kimoto-zukuri method to preserve its natural flavor. The company name and brand name "Izumibashi" is a combination of Izumi River and Hashiba, which used to flow through Ebina and the name of the storehouse was "Hashiba." It was done.
