Tamanohikari Sake Brewery has a brewery in Fushimi, Kyoto, which is famous for its sake. The company was originally established in Wakayama City, Wakayama Prefecture in 1673 (Enpo 1) by Rokuzaemon Nakaya, the founder of the company, with a license from the Kishu Tokugawa domain. The origin of the name is said to have come from generations of worshipers at Hayatama Shrine in Kumano, and the chief priest’s wish that the spirit of the main deity, Amaterasu Omikami, would come forth. It was moved to Fushimi in 1953 (Showa 28) after being damaged in the Great Air Raid on Wakayama during the war. It is also known as a brewery that started producing Junmai sake, which is now becoming mainstream, and was already known as a famous sake brewery during the Taisho era. Even after relocating, they continued to treat rice with the same sincerity, and in 1964, they were the first in the industry to release additive-free sake (junmai sake), which does not contain added alcohol or sugar. With the belief that good sake can be made only with good rice and good water, they aim to create “Ajiginjo” that enhances the flavor of food, and are currently operating a “Junmai Ginjo Brewery,” which is rare in Japan.
