Sengoku is another name for a crane. It has been turned into an icon and included in the design of the lid and label. Sakura City, Tochigi Prefecture, where Senkin no Kura is located, is located almost in the center of Tochigi Prefecture, at the northern tip of the Kanto Plain and on the border with the Nasu Plateau. The climate is inland, with large temperature differences, but there is little snowfall in winter. A vast rice field area stretches along the Kinugawa River, the Tone River system. The underground water from this river is used for brewing, and sake is brewed using rice grown in the same water vein. They grow “Kamenoo”, “Yamada Nishiki”, and “Omachi” in their own fields and under contract, and call themselves “Domaine Senkin.” This is the sake brewed by the young warriors of Tochigi, the Senkoku and Usui brothers.
His younger brother Masato is in charge of sake brewing using the planning and design skills of his older brother, Kazuki, who is a former sommelier and has excellent tasting skills, and his detailed brewing theory. Through the combined efforts of the two of them, the numerous sakes produced have received high acclaim in competitions.
The classic and modern Sengoku series are made using a super ancient manufacturing method, with no yeast added, and are made in wooden barrels. It has an impressive sour taste. It is divided into wild sour nature, elegant modernity, and soft acidity classic. Also, my brother is a former sommelier and is fluent in expressing the taste of sake.
