Sabae City, Fukui Prefecture, is a city in Fukui Prefecture whose population has continued to increase in recent years, which is truly unusual among regional cities. It has a strong image of having a 90% share of the glasses manufacturing market, but in recent years it has become more prominent as an IT town that utilizes open data and is attracting attention in regional cities.
The lacquerware and textile industries have been flourishing since ancient times, and are considered one of the three major industries along with eyeglasses. Kato Kichihira Shoten, which brews “Bon”, was founded in 1860 in Sabae City during the “Sakuradamongai Incident.”
“Bonma” represents the entire world/universe to me. In Sanskrit, it means “clean”. The word “Born” was born in English. The French word “Bonn” means good, wonderful, etc. The brewer, Danhide Kato, had a philosophy of making whatever was needed, and invented a rice washing machine, and went on to design advanced rice polishing machines, steamed rice cooling machines, etc. In addition, it is an amazing sake brewery full of original technology and equipment, such as glass imitation rice made using Sabae’s eyeglass surface processing technology.
Underground water that originates from the sacred Mt. Hakusan mountain range is pumped up from 180 meters underground and used for brewing. It is also characterized by the use of luxuriously polished special A Yamada Nishiki from Hyogo Prefecture and aging at freezing temperatures for over a year. The taste is clear and smooth, with layers of deep flavor. It is a luxurious sake that can only be tasted in Sanskrit. We export to about 100 countries around the world. This is also the best in Japan.
