Good sake rice is essential to brewing delicious sake. Izumibashi Sake Brewery, which has a brewery in Ebina City, Kanagawa Prefecture, is one of the few “cultivation and brewing breweries” in Japan, advocating the belief that “Sake production begins with rice production.” A distinctive feature of the brewery is that everything from cultivating sake rice to milling and brewing is carried out in the vicinity of the brewery and nearby areas. It was founded in 1857 (Ansei 4) during the Edo period. Sticking to traditional manufacturing methods, they only use Junmai sake, which is made using the traditional Kimoto-zukuri method to preserve its natural flavor. The company name and brand name “Izumibashi” is a combination of Izumi River and Hashiba, which used to flow through Ebina and the name of the storehouse was “Hashiba.” It was done. The trademark dragonfly comes from the company’s goal of creating “rice fields where dragonflies and other creatures can grow properly.” Aiming to pass on this Ebina farmland, which has been a granary for generations, to the next generation, they continue to look at sake not only as a brewed product but also as an “agricultural by-product.”
