Ippongi Kubohonten

Ippongikubo Main Store was founded in 1902 (Meiji 35). One of the representative breweries in Fukui Prefecture, the brewery is located in Oku-Echizen Katsuyama, in the heart of the sacred mountain Hakusan. The name “Ippongi” is derived from the Zen word “First Gitto” and means “the highest truth, the highest state of enlightened wisdom,” and it was the name of the Katsuyama-Ogasawara clan that ruled this area during the feudal period. It has a history that the name, which was named as an official sake, was inherited by Nikichi, the fifth generation head of the Kubo family, shortly after its founding. It gained a reputation as a “dry, sharp sake,” and in the early Showa period it became the largest sake brewer in the prefecture, producing the largest amount of sake. In 2021 (Reiwa 3), we renewed our main brand “Ippongi”. Most of the sake rice used is “Koshi no Shizuku,” which was developed in the local Okuetsu area, and all other rice has been changed to rice produced in Fukui Prefecture. The sake, which pursues the unique taste of Katsuyama, a region with deep heavy snowfall, has received high praise at various fairs and was even featured in ANA’s international first class.
