Hakkai Jozo is a major sake brewery founded in 1922 (Taisho 11) in Minamiuonuma City, Niigata Prefecture, one of the areas with the heaviest snowfall in Japan. Sake production takes into account the harsh winter climate, the ultra-soft water of Raiden-sama no Shimizu, which is the subterranean water of the magnificent sacred mountain Hakkaisan from which the brand derives its name, the quality of the earnest people of Uonuma nurtured in the snowy country, and the tradition of the Echigo chief brewers. The perfect environment has been created for this, and one sake brewer visited the area and said, “It’s like a place created by God to make sake.” Hakkai Jozo strives to make sake with sincerity and lives up to its words. With “Hakkaisan” as their only brand, the basis of their sake quality lies in sharing the same quality goals. During the mid-winter period, which is the most suitable time for sake making, we make full use of the best ingredients and the power of our excellent human resources to create “special sake.” This sake, which is not sold to the general public, is a symbol of Hakkaisan’s aspirations and is the “ideal sake” that is engraved in the hearts of each brewer, and they share the techniques and quality. All of Hakkaisan’s sake is made in pursuit of this “special sake.”
