Fukumitsuya is a sake brewery with the longest history in Kanazawa, founded in 1625 (Kanei 2) in the early Edo period. It is said that it began when Tasuke Shioya, who came to Kanazawa from Fukumitsu-cho, purchased the former sake brewery during the Yasunei era (1772-1780). The seventh generation changed the title of “Shioya” to “Fukumitsuya” after the birthplace of the previous generation. As for the famous sake, “Fukumasamune” has been known for a long time, and it has the number one share in the local market, and is also known as a sake that was once loved by Kanazawa’s literary great, Saisei Muro. The sake brewing process is characterized by the lavish use of abundant brewing water that has been harvested over 100 years from the foothills of the sacred Mt. Hakusan, and by contract farming, which has been carried out together with local farmers since 1960, starting from soil preparation. In 2001 (Heisei 13), the brewery changed its method to producing entirely pure rice, and as the first sake brewery in Japan with a production volume of 10,000 koku, it attracted much attention both within and outside the industry. Since the 1990s, the company has launched a multi-brand policy, and core brands such as “Kaga Tobi”, “Kuro Obi”, and “Modo Tose” have been born one after another. They are actively developing sake that is popular among young people and women. Although the brewery has a long history and believes in the belief that “tradition is a continuation of innovation,” successive breweries have been flexible in adapting to the changes of the times, and have continued to pass on the basics while still producing sake that suits the times.
