Takehara City, Hiroshima Prefecture, faces the Seto Inland Sea and has developed as a transportation hub for the Seto Inland Sea since ancient times. In the late Edo period, the city prospered as a salt manufacturing industry, and the cityscape that retains the vestiges of that time is known as “Aki’s Little Kyoto.” Fujii Sake Brewery has a brewery in this area. The company was founded in 1863 (Bunkyu 3), and the first generation began brewing sake after identifying Takehara, a land blessed with such clear water that groundwater is still used as tap water, to be suitable for sake brewing. The brand name “Ryusei” was named after the strong sake produced when brewed with water from a well at the foot of Mt. It won the prestigious first place at Japan’s first sake fair, the “1st National Sake Fair.” Its name became known throughout the country as it won the honor of being number one in Japan, surpassing the famous brewing areas of Nada and Fushimi. We are particular about making only junmai sake, and we brew sake based on the concept of what nature produces, and currently about 70% of our sake is brewed using the traditional method of kimoto-zukuri. Aiming to create sake that leaves a lasting impression, we respect the culture and traditions of the region and seek out flavors that reflect the climate. Recently, they have taken on new challenges under the name “Ryusei Lab.” and are also working on Kijoshu. The attached Sake Brewery Exchange Center is a renovated part of the brewery that dates back to Fujii Sake Brewery’s founding, and exhibits tools and sells seasonal products. It is a popular tourist spot in Takehara. While inheriting traditional sake brewing techniques, we pursue the essential excellence of sake.
