Manjo Jozo was founded in 1789 in Otaka, near Okehazama, where Oda Nobunaga defeated Yoshimoto Imagawa, and where the preliminary battle took place. Local Nagoya cuisine includes things like miso stew, fried shrimp, and Hatcho miso, but “Joshijin Kuheiji” has decided to marry it with French cuisine. We created a sake with a delicate taste that retains its freshness even after pasteurization, and then made our way across the ocean to Paris. The brewery jumped in and it was adopted by a number of three-star restaurants that tasted it.
Then, due to its reputation overseas, it was re-imported to Japan. Among the many sake labels with similar two or three kanji characters, “Brewer Kuheiji” is different. “Born in Kurodasho” is made from rice purchased from rice fields in Hyogo. “Kyoda” was cultivated in Omachi, Akaiwa. “Born in Camargue,” a wine brewed by growing Manobi, a rice variety unique to France, in the Camargue, France’s only rice-growing area, near Arles in Provence in southern France…and many more. They are releasing sake one after another that makes you want to know what it means.
In addition to producing rice wine, they acquired vineyards and a brewery in Burgundy. They also make wine with “DOMAINE KUHEIJI”. The latitude and longitude of the rice field are written on the label. By freely manipulating information technology, such as showing local locations on Google Maps, brewer Kuheiji is shaking up the world of sake, just as Nobunaga changed the world after him.
